Why Immersion?
Seems to be the regular practice in the New Testament and Apostolic Age.
It’s consistent with what baptism symbolizes.
baptizo (Greek: βαπτίζω) - to dip repeatedly, to immerse, to submerge (of sunken vessels); to cleanse by dipping or submerging, to wash, to make clean with water, to wash one's self, bathe.

The immersion leads to a permanent change of the vegetable.
